The Golden Brown Lechon

In the Philippines, one food can be equated to a feast or celebration... that is lechon. When one is planning to throw a grand party may it be for a birthday, anniversary, graduation, or thanks giving, the lechon is sure to be in attendance. It is a Filipino favorite because its a whole roasted pig perfect to feed a number of people. Who would say no to that?

 

Lechon is a dish that features a whole roasted suckling pig cooked over burning charcoal. The process of cooking and basting usually results in golden-brown crisp pork which is soft and tender on the inside.

 

The Philippine lechon's pig-roasting traditions originated in pre-colonial periods. The word itself is a Spanish name which is a general term for “roasted pig“. Although in the Philippins, it often refers to adult roasted pigs, not lechones (milk suckling pigs). It is considered as one of the unofficial national dishes of the country.

 

The lechon is known in all parts of the country with distinct local flavors and aroma. The Parada ng Lechon (roasted pig parade) is even a festival in Balayan, Batangas. In addition, Cebu also has their very own lechon festival which has mouthwatering array of lechon varieties from lechon-makers coming from different parts of Cebu province.

 

It has gathered international fame when the late Anthony Bourdain, American celebrity chef, author, and travel documentarian, had visited Cebu to experience the famous lechon and described it as “the best pig ever!”
